Steps
- 1
Peel the bananas and cut them in half lengthwise.
- 2
Roll each piece in brown sugar and lay it on a wrapper with a strip of jackfruit.
- 3
Fold in the sides, roll up tightly and seal the edge with a little water.
- 4
Heat the oil to 170 °C and fry the rolls in batches until golden.
- 5
Sprinkle the remaining sugar into the oil; when it melts and caramelises, turn the rolls to coat them.
- 6
Drain on a rack rather than paper, which sticks to the caramel, and let them cool a little before eating.
Tips and questions
- Can I use ordinary bananas?
- Yes, but choose firm, barely ripe ones; very ripe bananas turn mushy when fried. Small plantains are closest to Filipino saba.
- Can I make them ahead?
- Roll them a few hours ahead and keep them covered in the fridge, but fry just before serving so they stay crisp.
