Tips and questions
How long does it keep?
Up to 2 days covered in the fridge. Don’t leave it out at room temperature for long because of the mayonnaise and eggs.
Can I freeze it?
No. The mayonnaise splits and the potatoes turn grainy and watery when thawed.
Why does my potato salad turn mushy?
Overcooked potatoes or mixing them while hot. Cook them just until a knife goes in and let them cool completely before adding mayonnaise.
