Tips and questions
- Should Greek salad have lettuce?
- No. The traditional horiatiki is just tomato, cucumber, onion, pepper, olives and feta; lettuce waters it down.
- Can I make it ahead?
- Chop the vegetables up to a few hours ahead, but add salt, oil and feta just before serving so the tomatoes don’t go watery.
- What can I use instead of feta?
- A firm, salty sheep’s or goat’s cheese works best; for a vegan version use marinated tofu with lemon and oregano.
