Tips and questions
Can I use leftover tonkatsu?
Yes, that is a classic use. Crisp it in the oven for a few minutes, then simmer it briefly in the sauce with the egg.
How should the egg be?
Just set and still soft, almost runny. Cover the pan for less than a minute and take it off the heat straight away.
What can I use instead of dashi?
Instant dashi granules are easy to find. Failing that, use a light chicken stock.
