Tips and questions
- Where can I find anko?
- Asian supermarkets sell it in tins or pouches. You can also make it by simmering azuki beans with sugar until thick.
- How do I get an even golden colour?
- Use low-medium heat and wipe the pan with only a trace of oil. Too much oil leaves spotty, uneven pancakes.
- Can I use other fillings?
- Yes, custard, whipped cream with matcha or chocolate spread are popular in Japan too.
