Tips and questions
- How do I pick a ripe avocado?
- It should yield slightly to gentle pressure near the stem; if it is soft all over it may be overripe.
- Can I make it in advance?
- Only the onion; cut the avocado at the last minute so it doesn’t brown.
- What do Cubans eat it with?
- With rice and black beans, roast pork (lechón) or ropa vieja.
