Tips and questions
What can I use instead of sumac?
A little lemon zest gives a similar tang, with a pinch of sweet paprika for colour.
Can I make it ahead?
Dice the vegetables ahead, but dress and salt it right before serving; once dressed it gets watery within an hour.
What do I serve it with?
It is the classic side for kebabs, köfte and grilled meat or fish, with flatbread to soak up the juices.
