Tips and questions
- Why are my noodles mushy or stuck together?
- They were soaked too long. Soak them in warm, not boiling, water until just pliable; they finish cooking in the wok.
- Can I make it vegetarian?
- Yes: leave out the prawns, double the tofu and use soy sauce or vegan fish sauce instead of fish sauce.
- What can I use instead of tamarind?
- Lime juice with a little extra sugar gives a similar sweet-sour balance, though less deep.
