Tips and questions
Why did my cheese sauce go grainy?
The sauce was too hot. Take it off the heat before adding the cheese and use block cheese you grate yourself.
Can I make it ahead?
Assemble it a day ahead with slightly undercooked pasta and an extra splash of milk, then bake it straight from the fridge for a little longer.
