Tips and questions
- How do I keep the chicken juicy?
- Cut it into even strips and cook it in a very hot pan in batches, so it sears instead of stewing. Thigh meat is even more forgiving.
- Can I make them gluten-free?
- Yes, use corn tortillas instead of flour ones and check the spice labels. The filling itself is naturally gluten-free.
- Can I prepare the filling ahead?
- You can marinate the chicken and slice the vegetables up to a day ahead. Cook them just before serving so the peppers stay crisp.
